Ingredients

  • 1 head of cauliflower cut into pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper ground
  • 3 ounces cream cheese softened
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • ½ cup heavy whipping cream
  • teaspoons parsley dried
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder or to taste
  • 1 tablespoon fresh parsley roughly chopped (for garnish)

Instructions

  • Preheat oven to 420 degrees F / 215 degrees C.
  • Line a baking dish with parchment paper or foil.
  • Arrange 1 head of cauliflower florets on a baking sheet, drizzle 2 tablespoons olive oil on them, and season with 1 teaspoon salt and ½ teaspoon pepper.

  • Roast for 15 to 20 minutes, or until crisp-tender.
  • In a small saucepan combine 3 ounces cream cheese, 2 cups cheddar cheese, 1 cup mozzarella cheese, and ½ cup heavy whipping cream. Heat over low to medium heat until the mixture is smooth and the cheese is completely melted, stirring frequently.

  • Add spices.

  • When the cauliflower is done, transfer the cooked cauliflower to a large bowl. Pour cheese sauce over it and gently fold the sauce into the cauliflower.
  • Garnish with chopped 1 tablespoon fresh parsley.
