Ingredients

  • 3 eggs large
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano

  • 12 ounces frozen broccoli riced

Instructions

  • Preheat oven to 400 degrees F / 204 degrees C. Line two rimmed baking sheets with parchment paper.
  • In large bowl, beat 3 eggs with 1 teaspoon kosher salt, ¼ teaspoon black pepper, ½ teaspoon garlic powder, ½ teaspoon dried oregano, and ⅛ teaspoon chili powder.

  • Add 1 cup almond flour and 1 cup cheddar cheese to mixture and stir until well combined.

  • Carefully fold in 12 ounces frozen broccoli riced, then use hands to mold mixture into 24 evenly sized patties.

  • Arrange patties on prepared baking sheets, ensuring they're equally spaced and not touching.
  • Bake in preheated oven for 15 minutes or until golden brown.
  • Let cool for 3 to 5 minutes before serving.

Notes

  • Finely chop fresh broccoli instead of using frozen broccoli rice for a crunchier texture and fresher taste. 
  • To reduce cooking time, use an air fryer instead of an oven. Place the tots in the preheated air fryer basket and cook at 375 degrees F (190 degrees C) for 10 to 15 minutes.
  • Serve with your favorite low-carb dipping sauce, such as ranch dressing, marinara sauce, or guacamole. 
  • Experiment with different types of shredded cheese, such as mozzarella, pepper jack, or Gouda.
  • Use a mini muffin tin to make smaller, bite-sized tots for parties or easy meal prep. 
  • Save time by using a food processor to grate the cheese and chop fresh broccoli florets.
