Ingredients

  • 3 tablespoons parsley chopped
  • 1 green onion chopped
  • ½ cup golden beets steamed
  • salt and pepper to taste
  • 5 ounces arugula
  • 3 ounces feta cheese crumbled
  • 2 tablespoons olive oil extra virgin
  • 2 tablespoons balsamic vinegar

Instructions

  • In large bowl, toss together 3 tablespoons parsley, 1 green onion, and ½ cup golden beets. Season with salt and pepper to taste.

  • Add fresh 5 ounces arugula and 3 ounces feta cheese to bowl and gently mix until combined.

Notes

  • Roasted beets can be used instead of steamed beets for a deeper, sweeter flavor.
