Ingredients

  • 1 cup mozzarella cheese shredded
  • 6 ounces crabmeat
  • 2 tablespoons mayonnaise
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice
  • 3 scallions chopped
  • 6 tablespoons guacamole
  • 1 tablespoon chopped cilantro

Instructions

  • Preheat oven to 350 degrees F / 175 degrees C.
  • On silicone mat or parchment-lined baking sheet, divide 1 cup mozzarella cheese into three circles.

  • In mixing bowl, combine 6 ounces crabmeat, 2 tablespoons mayonnaise, 2 tablespoons lemon zest, 2 tablespoons lemon juice, and half of scallions.

  • Divide 6 tablespoons guacamole evenly among tostadas, about 2 tablespoons per tostada.

Notes

  • If crabmeat isn't available, shredded chicken, pulled pork, or cooked shrimp are excellent alternatives.
  • Include chopped tomatoes, shredded lettuce, and sour cream to make these tostadas even more delicious.
  • Instead of mozzarella, you can experiment with different types of cheese, such as cheddar or pepper jack, for added variety. 
  • Instead of cheese, you can use almond flour tortillas for a more classic tostada shell.
