Preheat oven to 350 degrees F (180 degrees C).
Use a parchment-lined baking sheet and place a wire rack on top.
Lay 1 pound bacon strips evenly onto wire rack and bake for 25 to 35 minutes.

While bacon is cooking, mix ¼ cup coconut oil, 3 tablespoons cocoa powder, 2 tablespoons erythritol, and 3-5 drops Stevia in a saucepan over medium heat until thoroughly combined and smooth.

Dip cooked bacon strips into chocolate mixture, coating them completely.
Place dipped bacon back onto wire rack and let cool until chocolate hardens.
