Ingredients

  • 1 cauliflower head
  • 4 hard-boiled eggs large
  • cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon garlic powder
  • salt and pepper to taste
  • 1 celery stalk chopped
  • green onions garnish
  • tarragon garnish

Instructions

  • Cut 1 cauliflower into small florets.

  • Bring pot of heavily salted water to boil and add cauliflower.
  • Cook for 8 to 10 minutes until soft but firm, similar to texture of baked potato.
  • Remove cauliflower florets from water and pat dry with paper towels to remove excess moisture.
  • In large bowl, mash 4 hard-boiled eggs with a whisk.

  • Add ⅓ cup mayonnaise, ½ cup sour cream, 1 tablespoon Dijon mustard, ¼ teaspoon garlic powder, and salt and pepper to taste. Mix well.
