Ingredients

  • 1 cauliflower head
  • 4 eggs large
  • cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon garlic powder
  • salt and pepper to taste
  • 1 celery stalk chopped
  • green onions garnish
  • tarragon garnish

Instructions

  • For perfectly hard-boiled eggs, place 4 eggs in water, cover and bring to boil. Remove from heat and don't cover. Let sit for 7 to 8 minutes.
  • Place eggs in ice water to stop eggs from overcooking.
  • Cut 1 cauliflower into small florets.

  • Boil cauliflower for 8 to 10 minutes until soft, but firm.
  • In large bowl, mash eggs with whisk.

  • Add ½ cup sour cream, ⅓ cup mayonnaise, 1 tablespoon Dijon mustard and salt and pepper to taste. Mix well.

  • Slice 1 celery stalk. Then, add celery and cooked cauliflower to egg mixture.

  • Season with ¼ teaspoon garlic powder. Mix well.
  • For extra flavor, garnish with tarragon and green onions .
