Vegan Tofu Peanut Butter "Sandwiches"

Pan-fried tofu topped with peanut butter and sunflower seeds is SO delicious.  The tofu actually resembles a bread substitute. Saute some asparagus and mushrooms to get your healthy serving of veggies!

Vegan Tofu Peanut Butter "Sandwiches"

TOTAL TIME: 40 minutes
SERVES: 2

INGREDIENTS:

Tofu - 1 brick (about 4 oz)

Oil -  about 3 tablespoons - we used avocado oil for this recipe

Peanut Butter - about 3 tablespoons

Sunflower Seeds - 2 tablespoons

Mushrooms - 1 large portabello

Asparagus - 6 pieces
