Ham, Cheese, Kale Egg Bites

Make these egg bites ahead of time and you have a perfectly balanced and nutrient dense breakfast for on the go!

Ham, Cheese, Kale Egg Bites

TOTAL TIME: 45 minutes

SERVES: 5 egg bites

INGREDIENTS:

Onion - 1/3 cup

Ham - 1/3 cup

Baby Kale - 2 cups

Oil - 2 tablespoons - this recipe used avocado oil

Eggs - 2 large

Shredded Cheese - 1/4 cup

Heavy Cream - 1/4 cup

DIRECTIONS:

Preheat oven to 350 degrees.

Dice onion.  Add onion.

Add ham. 

Add kale. 

Cook on medium heat with 2 tablespoons oil.  

Evenly distribute mixture to molds.

For egg mixture:

Mix eggs, cheese, heavy cream.

 

Pour into a spouted container to make it easier to pour.

Evenly distribute into molds.

Cook for 25-30 minutes depending on size and oven.
