"French Toast" Egg Loaf

This keto-friendly recipe mimics the flavors and textures of cinnamon french toast.  Top it with some keto-friendly whipped cream (heavy cream + keto-friendly sweetener in a blender or stand mixer) and berries!

"French Toast" Egg Loaf

TOTAL TIME: 45 minutes

SERVES: 1

INGREDIENTS:

Cream Cheese - 2 oz

Butter - 2 tablespoons

Eggs - 2 large

Cinnamon - 1 teaspoon

Erythritol - 2 teaspoons

DIRECTIONS:

Preheat oven to 350 degrees.

Add cream cheese

Add butter

Add eggs

Mix in a blender on high for 30 seconds.

Pour mixture into oven-safe dish.  Add cinnamon and sweetener.  Swirl.

Bake for 20-30 minutes, depending on the size of your dish or maybe you made muffins.

Top with berries and keto-friendly whipped cream - which is just whipped heavy whipping cream with some keto-friendly sweetener.
