JALAPENO GOAT CHEESE POPPERS
Goat cheese (or your favorite soft cheese or Boursin flavor!)
Cut stem off pepper and cut in half and clean out the seeds. ( I do this with cooking gloves to prevent getting pepper juice into my skin. Pick up a bag at a Bed Bath and Beyond or other kitchen shop. They are really handy.)
Fill the pepper halves with cheese.
Bake on a silicone sheet, foil or parchment at 375 for about 20-25 min until the cheese begins to brown slightly, and you see the pepper has softened.
Put on a plate and let cool slightly, then serve warm.
These are great and even a spicier pepper mellows in the oven.
