Cauliflower Wraps

Cauliflower Wraps

Okay, I never thought these would work but they DO!  And the uses are limitless- tacos, sandwiches, crepes, etc.

Ingredients:

½ head of cauliflower or 2 cups of riced cauliflower

¼ tsp salt

1 clove of minced garlic

herbs of your choice (I love Italian herbs.)

2 eggs 

Directions:

Preheat oven at 375 F. Line two baking sheets with parchment or baking sheets. In a food processor, pulse cauliflower in til crumbled. (If using riced, of course, skip this.) Steam cauliflower for 8 minutes.

Pour steamed cauliflower in a dishtowel and drain, squeeze, and press to pull out water. Put in a bowl and add other ingredients. 

Pour about ¼ cup of mix onto the baking sheet and spread into a thin circle - not so thin that you can see the parchment or baking sheet. I used a ladle and spread it in circles, like pizza sauce on a pizza, to spread out the mixture in a wide circle. My batch made 4 wraps, 2 on each baking sheet. 

Bake for 15-17 minutes, or until dry and pliable. Using a thin spatula, pull off the baking sheet and put onto a rake to cool.

These wraps are soft, pliable, and don’t break apart. Be creative. Use them however you want. I think they are GREAT.
