Taco Salad

A keto staple/favorite is definitely the taco salad!  Make the guacamole and pico de gallo from scratch.

 

Taco Salad

TOTAL TIME: 30 mins

SERVES: 1

INGREDIENTS:

Hamburger meat (3 oz)

Cheese (2 oz) - ¼ cup

Avocado (50 g) - ½ medium avocado

Lettuce (3 oz)  - 3 cups

Onion (40 g) - 2 tablespoons

Sour Cream (56 g) - 2 tablespoons

Tomato - 2 tablespoons

Salt - ½ teaspoon

Lime

DIRECTIONS:

  1. Cook hamburger meat on medium heat until cooked through.  About 10-15 minutes.

  2. In a bowl, mash avocado with a whisk.

  3. In a separate bowl, mix together tomato, onion, lime, cilantro.

  4. Fold in half the tomato mixture into the avocado. Save the other half of tomato mixture to put on top of salad. 

  5. Build salad.  Lettuce, meat, cheese, guacamole, sour cream, tomato! Garnish with cilantro and lime for extra bright flavors!
